About Our Tandoori Chicken

Tandoori cooking is the backbone of East Indian grilling, and it is one of the reasons Winnipeg guests have kept Charisma Of India on their list for years. The tandoor runs hot enough to seal the outside of the chicken in minutes, which is why tandoori chicken tastes so different from anything you can produce in a home oven.

The marinade does the heavy lifting: thick yogurt tenderises the meat while lemon juice, ginger, garlic, red chilli, coriander and garam masala work their way in. Nothing about the dish is heavy — there is no cream and no gravy — so it is a good choice if you want big flavour without a rich sauce.
